Note: We made the chicken pot pie recipe again and it was very bland.  I think I missed some ingredients when I typed it out.

Sweet Potato Soup:

1 sweet potato - cut into small cubes
diced onion and bell peppers (any amount.  We used what was left from burritos earlier this week )
1 can diced tomatoes
1 can black beans - drained
1 can navy beans - drained
1 cup frozen corn
2 cups chicken broth
1.5 tsp minced garlic
1 tsp cumin
1/4 tsp cayenne
1/4 tsp salt
shredded cheese

Saute sweet potato with vegetable oil in pan on medium-high heat until tender.  After the first 5-8 minutes add onion, bell pepper, and garlic.  When tender, add to pot with tomatoes, beans, corn broth, and spices.  Bring to a boil and then simmer (covered) on low heat for 30 minutes.  Serve topped with cheese.

Note:  the original recipe called for chili powder as well, but we didn't have any
